  • 10 kg meat
  • 200g garlic
  • 200g ginger
  • 400 ml oil
  • 150 ml lemon juice
  • 1 onion
  • 1 bunch spring onion
  • 5 scotch bonnet
  • 5 tbsp allspice
  • 5 tbsp ground nutmeg
  • 5 tbsp ground cinnamon
  • 5 tbsp gravy browning
  • 3 tbsp salt
  • 3 tbsp pepper
  • 1 bunch thyme
