Garden Peas Puree

- 500g garden peas
- 1/4 lemon
- 10g caster sugar
- 10g maldon salt
- 200ml pomace oil
- 50ml white wine
- 100g banana shallots
- 0.2 garlic
Method:
Slice shalots and roughly chop garlic. Lightly sautee on frying pan. Add lemon juice, white wine, salt and sugar, reduce by half. Add peas and mix well. Cook approx 4 min. Pour into thermomix, blitz on speed from 4 to 10 for approx 15 min adding slowly pomace oil to achive smooth shiny texture.
